Dagdi variety of Jowar used to make flour & the grains are organically cultivated right from sowing seed to harvesting of crops. Seeds used are of ‘Desi Indian’ variety and are sprayed with jeevamrut, dashaparni ark and various traditional organic sprays to avoid pests. Harvested jowar is then separated from its husk using ancient winnowing methods of separation.
After they are sun dried, they are grinded in a stone grinder at a very low RMP (Rotations per minute). Due to this traditional process, no heat is generated and all the nutrient contents are intact.Jowar is also popularly known as DagdiShaluJowari, which is rich in nutrition and has low gluten.

Ingredients:
a. Jowar flour.
b. Vegetables like onion, tomato, coriander.
c. Garlic paste.
d. Grated mixture of Chilly and garlic.
e. Salt.
f. Oil.
Recipe:
a. Chop up all the vegetables finely and add it to the jowar flour along with pinch of salt for taste. Mix it with spoon.
b. Add some water to it and knead the dough.
c. Once dough is ready, make small rotis of it. You can make them with hand or also use rolling boards.
d. Now its time to roast them. Add some oil to the pan and keep it on a medium flame. Now roast small rotis on it for 2 minutes and then flip it and roast it again for 2 minutes. Once the rotis turn into golden color, they are ready to be served.
e. Serve it with coconut chutney or ketchup to make it more delicious. Happy meal!
Directions to store:
a. Adrish Jowar flour can be stored in an air tight container by placing 2-3 bay leaves (Tejpatta) or 1-2 whole dry red chillies. Preferably avoid plastic containers. It is recommended to store flour in the traditional way to protect and hold all the nutrients in the flour.
